New Year's Eve I spent with my family and our good friends the Cunningham's. Their neighborhood is filled with kids and the cul-de-sac where they live is blocked off every year for an annual pot-luck that hosts friends, family and even pets. Infants to Grandparents frequent this fun and festive time and this year, I brought a winner of an appetizer. It was so incredibly easy that I thought I should share it with all of you. It makes a great appetizer for tailgating, having friends over to watch the game and really just about any other casual event.
You can cook this in a crock pot or on the stove. I've cooked them both ways and both are equally delicious. As usual, I chose the easier way out and opted to purchase pre-made beef meatballs, but you can substitute with turkey or chicken, or if you are really ambitious you could make the meatballs by hand. The recipe came from my good friend Kimberley, but I modified it slightly, so where the credit lies, I am not really sure.
RECIPE
- 1 - 4 pound bag of pre-made, pre-cooked 1/2 ounce meatballs (If you decide to make your own, you'll need around 130 meatballs)
- 1 bottle of Soy Vay Teriyaki sauce (if you can't find this, use another teriyaki sauce you love)
- 2 cans of pineapple chunks
- 1 can of pineapple juice (you'll need this, as the cans of pineapple chunks don't quite provide enough juice)
- 1 large sweet onion, sliced into rings
DIRECTIONS
- Turn crockpot to high
- Layer sliced onions on the bottom of crockpot
- Add pre-ooked meatballs (if making your own, I recommend you brown them first)
- Shake Soy Vay Teriyaki sauce (bottle tends to settle), pour entire bottle over meatballs
- Add 2 cans of pineapple chunks with juice
- Add additional pineapple juice until about an inch below the top of the meatballs
- Cook on high for 3 to 4 hours (the longer the better). If you don't have a crockpot, cook in a pot and bring to a low simmer. Cover and let cook for 2 hours, making sure to check often
SERVING INSTRUCTIONS
- Serve straight from the crockpot or place in a large bowl
- Serve with toothpicks and little cups
