St. Patrick's Day falls on Thursday this year and it's the perfect night to invite friends over for a weeknight dinner party. We have put together a classic meal that's got all the Irish favorites like corned beef and soda bread.
I have to confess whenever I go out to the market I always sneak a sample of the Irish cheddar cheese...yum! So for starters, set out some crackers, grapes and Irish cheddar cheese. The Kerrygold brand is my favorite and you can usually find it at any of the large grocery stores. Their white cheddar is sharp, rich, and excellent.
Ok, this is a true story but a while back I was trying to make beef brisket in the crock pot for my family but instead I ended up making corned beef (huh?)...I guess I wasn't paying attention when I bought the meat or prepared it for that matter...anyway, I did discover that cooking corned beef in a slow cooker is probably one of the best ways to prepare this dish. This corned beef and cabbage recipe is a complete meal with potatoes, carrots, and cabbage. All you have to do is throw the ingredients in the slow cooker and leave on for several hours. A dollop of tangy mustard or horseradish cream is the perfect accompaniment.
